📚 Mushroom History

Known as "Enokitake" in Japan and "Golden Needle Mushroom" in China, this species has been cultivated for over 800 years. Traditional cultivation began on the stumps of the Chinese Hackberry tree (Enoki in Japanese). In the 1900s, Japanese cultivators discovered that growing in darkness with high CO2 levels produced the characteristic long, white stems now familiar in Asian cuisine. Commercial cultivation expanded globally in the 1970s.
